1.) Brine breasts in a cool salt water bath for 15 - 30 minutes. Dry with paper towel.
2.) Coat breasts in oil and place in baking dish.
3.) Season as desired generously.
4.) Roast breasts at 450 for 18-25 minutes or more depending on thickness. Check for proper temperature.
5.) Rest chicken 2-5 minutes prior to serving.
