4 large eggs
1 1/4 cups cocoa
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
2 sticks butter
2 1/4 cups sugar
1 1/2 AP flour
Methods:
- Preheat oven to 350, grease a 9" x 13" pan.
- Beat the eggs, cocoa, salt, baking powder, and vanilla in a mixing bowl for about 4 minutes.
- Melt the butter over low heat in a saucepan and then add the sugar and stir to combine and continue heating until the sugar is dissolved and the mix becomes shiny.
- Add the hot butter/sugar mixture to the egg/cocoa mixture, stirring until smooth.
- Add the flour and stir until smooth.
- Spoon batter into the pan and bake for about 30 minutes or until a toothpick comes out clean from the center of the pan. Cool and serve or even frost with chocolate butter cream frosting.
Frosting:
1/2 cup butter, softened
2-3 cups powdered sugar
1 teaspoon vanilla
1/4 cup cocoa
2-3 tablespoons milk
Combine ingredients with a hand mixer and adjust milk/powdered sugar to achieve the desired consistency.
